You guys! Time has flown by and where have I even been? I’ve been running all over town working on some exciting new projects and opportunities! I really wish I could tell you all about it, but I’m not quite there yet and I don’t want to jinx anything. Here are some fun things that I can tell you about though!
1) My high school BFF turned 30. I missed the party due to a family emergency, but it looks like they had a great time!
2) OMG Downton Abbey did WHAT? I don’t to give away any spoilers, but I was shocked by the season finale. I made popcorn for the drama and it was sooooo good. Stovetop popcorn is the BEST!
3) The other night, I made Jay a really nice dinner of creamy lemon farro topped with steamed kale and sauteed mushrooms. I used oyster mushrooms, maitake mushrooms, and regular old button mushrooms. Crusty toasted sourdough bread on the side made for a wonderful touch. I loved this dish.
4) I should give you an update on my monthly challenges! I’ll save that for tomorrow, though.

Has your week been crazy or is it just me?
“Well, you were right.”
It’s not my favorite thing to mutter to my well-meaning boyfriend, but sometimes you just have to suck it up and do it anyway. Today was that day. I was so excited about my Mile/Day Challenge and I completed it on Feb 1 only to wake up the next morning with a sore throat. Jay told me I needed to cool it on the gym so I didn’t get sick and I actually took his advice. It was Saturday, after all. Sore throat again that evening. No gym on Sunday. Stayed totally vegan and barely drank at the Super Bowl party (win!) and again no gym because of the throat on Monday. At this point, I’m fretting that I made a promise to the Internet (because that sounds sane) to run a mile per day, and I just couldn’t let the Internet down! Of course, this is code for making a promise to myself and not wanting to let myself down, but that sounds so much more depressing.
Anyway, I worked a super long day today and made sure to eat great. I got to the gym around 7:30 PM and spent time on the elliptical and treadmill. (One Modern Family + one New Girl = Gym Time) I got home, felt super excited/nervous about a meeting tomorrow and sought reassurance from Jay that I am, as suspected, completely awesome. To further calm my nerves, I did the only other relaxing thing I know besides bubble baths: I cooked.
I dry-fried tofu cubes, sautéed some veggies, and made a peanut butter coconut sauce while the rice was cooking. I pulled out the slow cooker and threw in chickpeas, fingerling potatoes, onions, peas, and more and started a slow vegetable curry we can have for dinner tomorrow. Then I made rice…again. At this point, Jay walks over and tells me everything will be great and steals a few tofu bites before dragging me out of the kitchen. And that’s when it hit me: coughing, wheezing, throat hurting. I felt like my lungs were on fire from breathing in so much dry, cold air. I pouted my lower lip and I had to admit it.
“My throat hurts and, um, I know you said not to work out… Well, you were right. “
He smiled. He gave me a squeeze. He asked if there were leftovers.
Good morning! It’s February, the month of love, Valentine’s Day, snow angels, and winter greens and squash. It’s supposed to snow here tonight, which is just odd considering that it was 73 degrees a couple of days ago. Sigh, Virginia weather is crazy. Anyway, it’s the beginning of the month, so that means it’s time for challenges!
Each month, I’m challenging myself to a few new challenges, here and on my Kristel Poole Photo Blog. The ones here will be mostly food, health, and home related and the ones on the other blog will focus on the rest of my life. I can’t wait to get started and I also want to hear what your goals are this month, so make sure to add that into the comments!
Challenge #1: Vegan February!
That’s right, it’s vegan February! I was convinced by a request from Jay and watching the documentary Vegucated. I may write about that film later, but definitely look it up if you are interested in learning more about going vegan. Anyway, we have both been eating more plant-based than usual since the film and decided to do an entire month of eating vegan. I thought it would be super easy until I remembered the Super Bowl is this coming Sunday and most appetizers that I can eat as a vegetarian include cheese – and now I can’t even have that! So, expect a bunch of vegan posts coming up and even some great vegan football eats!
Challenge #2: Post every day!
My biggest setbacks with my blog are caused by normal busy life taking over and the blog and my cooking falling to the background. I’m so pumped about so many awesome things coming up that I’m not going to let that happen again! I will post every single day of this month!
Challenge #3: Run a mile every day!
Am I crazy? Why do I want to do this? Well, I am crazy and the winter always makes me want to do anything BUT run a mile every day, so why not turn that on it’s ass and just freakin’ do it! Hopefully it’ll give me extra energy and a much-needed mid-winter boost! Let’s see how it goes!
